Programs Open
A feast for the senses awaits you in scenic Bayfield. Hands-on cooking in the spirit of French regional cuisine is the order of the day. Led by the chef and his two sous-chefs we will conjure up regional treats from locally sourced ingredients. Recipes will be explained as you go, with enough time to answers the questions created by your curiosity. Menus for lunch and dinner will be chosen from very simple local ingredients and transformed into culinary magic. Local suppliers will impart their knowledge of sustainable farming and the tricks to identifying quality produce. Afternoons away from the kitchen are spent discovering the charming town of Bayfield, walking the riverbank, visiting local artists and a birding expedition.
Rate: $1,129 per person, based on double

Capture a new perspective of the world as you perfect your photography skills and techniques. Learn how to improve your digital photographs with the help of an award-winning photojournalist and documentary filmmaker. Informative lectures and workshops will review lighting strategies, Photoshop and editing techniques. Consider the history of photography as you view some of the most iconic photographs in the world, as well as the progress that cameras have made from the glass plate to the digital age. Throughout the week, sample tastes from the region’s local farms and restaurants. Walk exquisite trails and visit conservation areas and parks that will provide unique subject matter for field trips and practice sessions.

Discover the magic of theatre through
play-oriented sessions and visit the renowned Stratford Shakespeare
Festival. Morning workshops will relate to the plays presented at the
Stratford Festival. Conducted by Art Director Jim Schaeffer, the
classes will enhance the level of comprehension of each play, outlining
communication skills and techniques used on stage by the playwright,
the actors and the directors. Discuss staging, wardrobe, makeup, wigs
and shoes. Experience the theatre from a different perspective! Evening
guest speakers relate local history and other interesting topics.
May 9-14: Plays include Peter Pan by J.M. Barrie, Kiss Me, Kate by Cole Porter and As You Like It by William Shakespeare.
May 23-28: Plays include As You Like It and The Winter's Tale by William Shakespeare, and Jacques Brel Is Alive and Well and Living in Paris, an original Off-Broadway production.
June 13-18: Plays include Evita by Andrew Lloyd Webber, Kiss Me, Kate by Cole Porter and The Tempest, featuring Christopher Plummer, by William Shakespeare.
August 22-27: Plays include Pearl Gidley by Gary Kirkham at the Blyth Festival, and William Shakespeare's The Tempest, featuring Christopher Plummer, and Peter Pan by J.M. Barrie at the Stratford Festival.
September 19-24: Plays include As You Like It and The Winter's Tale by William Shakespeare, and Dangerous Liaisons by Christopher Hampton.
October 3-8: Plays include Peter Pan by J.M. Barrie, Kiss Me, Kate by Cole Porter and Evita by Andrew Lloyd Webber.
Rate: $1,235 per person, based on double
occupancy, including theatre tickets.
